Peach Tacos
5 Tablespoons butter
3/4 cup brown sugar
3/4 teaspoon cinnamon
4 flour tortillas
8 oz cream cheese, softened
1/2 cup sugar
1 1/2 teaspoon almond extract
3 cups peaches, diced
3/4 cup pecans, finely chopped
Melt butter in a skillet over medium-low heat. Stir in brown sugar and cinnamon. Place tortillas in the skillet one at a time and fry in sauce 5 minutes, then flip the tortilla over and fry an additional five minutes. Remove the tortilla from the pan and repeat with the other tortillas.
Meanwhile, in a mixing bowl, stir together cream cheese, sugar, and almond extract. Gently spread over each tortilla when they are removed from the pan. Add the diced peaches over half of the tortilla and fold over to enclose the peaches and cream cheese mixture. Sprinkle each with pecans.

Fresh Peach Dessert
3 cups freshly sliced peaches
2 packs graham crackers (the small packs)
1/4 cup sugar
1/4 cup melted butter
8 ounce package of 1/3 less fat cream cheese
8 ounces of Cool Whip
1 cup powdered sugar
3 oz. peach Jello mix
1/2 cup sugar
1 1/2 cup water
Slice the skin off the peaches, clean and set aside. Boil 1 1/2 cup water and stir in peach Jello with 1/2 cup sugar until both are dissolved. After the Jello has cooled, mix with peaches and place in the fridge to cool while preparing everything else.
Whip cream cheese, cool whip and powdered sugar in a bowl with electric mixer. Smash the 2 packs of graham crackers and place into a bowl adding the melted 1/4 cup butter and 1/4 cup sugar. Mix well and place onto the bottom of a 9X13 Pyrex dish. Pour cream cheese mixture on top. Add the Jello/peach mixture as the finale.
Allow 4 hours or longer to set. Enjoy!
